Spring & Summer Menus
Spring and Summer have alluring ways to
keep wilting appetites alive. As Spring begins with asparagus
and fiddleheads as Summer arrives with the first tiny new
potatoes, bright red tomatoes and tender peas.
One's thoughts turn to strawberries and raspberries
with their striking flavours, as well as blueberries, gooseberries
and a fresh abundance of orchard fruits.
The season's beauty of quality local vegetables
and fruits has long been noteworthy. Canada provides some
of the world's finest angling and some of the world's finest
fish. A delight on a warm Summer's
eve is Atlantic salmon which has become a favourite and specialty
at Chartreuse.
